Salmon & pea pasta

- Serves 4
Ingredients
- 375g penne
- 1 cup frozen peas
- oil for cooking
- 4 spring onions, sliced
- 400g can red salmon, drained
- zest of 1 lemon
- ¾ cup extra-light cream
- ½ cup reduced-fat grated cheese
- cracked black pepper, to taste
- dill springs, to serve
Method
- Cook pasta until tender. Add peas to pasta for last minute of cooking. Drain well.
- Meanwhile heat oil in a medium non-stick frying pan over medium heat. Add spring onions, salmon, lemon zest and cream and cook for 5 minutes. Return pasta to pan and sprinkle with cheese. Gently heat until warmed through. Season with pepper and sprinkle with dill to serve.
