Quick quesadillas
- Preparation time 5 minutes
- Cooking time 3 minutes
- Serves 2
Ingredients
- 2 medium tortillas
- ½ avocado, mashed
- freshly ground black pepper, to taste
- ½ tomato, seeded and diced
- 1 tbsp taco sauce or salsa
- ¼ cup grated reduced-fat cheese
- coriander, chopped (optional)
Method
- Heat sandwich press.
- Spread 1 tortilla with avocado. Season with pepper.
- Top with tomato, sauce and cheese. Add coriander, if desired.
- Top with second tortilla.
- Cook in sandwich press for 2–3 minutes or until cheese is melted. Cut into wedges to serve.
HINT: Leftover Mexican mince can be used to make meaty quesadillas.
