Lemon delicious
- Preparation time 15 minutes
- Cooking time 25-30 minutes
- Serves 6
Ingredients
- 3 eggs, separated
- 3 tsp grated zest
- ½ cup caster sugar
- 30g melted margarine
- 1 cup skim milk
- 1/3 cup lemon juice
- ½ cup self-raising flour
- ½ cup castor sugar, extra
- 6 scoops NESTLE PETERS Light and Creamy Ice Cream
Method
- Preheat oven to 180°C. Lightly grease 6 x 1-cup dishes
- Beat eggs yolks, zest and sugar in a large bowl with electric mixer until thick and creamy.
- Stir in margarine, milk, juice and sifted flour.
- Beat egg whites until soft peaks form. Add extra sugar gradually and beat until dissolved between additions
- Fold into lemon mixture in 2 batches.
- Pour into dishes. Place in baking dish with enough hot water to come halfway up the side of the dish.
- Bake for 25–30 minutes or until pudding is just set.
- Serve with NESTLE PETERS Light and Creamy Ice Cream.
HINT: Watch these while cooking. They need to be removed from oven.
