Chicken salsa sandwiches

- Serves 4
Ingredients
- 2 tomatoes, seeded and coarsely chopped
- 1 Lebanese cucumber, coarsely diced
- zest of 1 lemon and 1 tbsp fresh lemon juice
- ½ cup fresh coriander leaves
- salt and pepper, to taste
- 8 slices wholegrain bread
- ½ cup low-fat cream cheese spread
- 4 butter lettuce leaves
- 120g shaved chicken
Method
- To make salsa, combine the tomato, cucumber, zest, lemon juice and coriander in a bowl. Season with salt and pepper.
- Spread 4 slices of bread with cream cheese. Top with the butter lettuce, shaved chicken and salsa. Finish with remaining bread slice.
