Heat 1 tbsp oil in a large non-stick frying pan over medium heat. Cook sausages for 6–8 minutes or until browned. Remove and slice into bite-sized pieces.
Add onion, garlic, carrot, capsicum and MAGGI Hot Chilli Sauce and cook for 5 minutes until tender. Add stock, risoni and sausages, stir well to combine. Simmer gently, covered, for 12 minutes, stirring halfway through cooking time or until risoni is cooked.
Stir through cheese, then let risoni stand for 5 minutes before serving.
