Apricot & apple sponge pudding

- Serves 6
Ingredients
- 400g pie apple
- 400g pie apricot
- ¾ cup caster sugar
- 3 eggs
- ¾ cup self-raising flour
- 1 tbsp milk
Method
- Preheat oven to 180°C.
- Combine apple, apricot and ¼ cup sugar and spread in lightly greased 8-cup capacity ovenproof pan.
- Using an electric beater, beat eggs and remaining sugar until light and creamy.
- Gently mix in flour and milk.
- Spread over fruit.
- Bake for 45–50 minutes until lightly golden and sponge bounces back when touched.
HINT: Serve with SKI D'Lite Vanilla Creme Yogurt, NESTLE PETERS Light and Creamy Vanilla Ice Cream or reduced-fat custard.
